Easy Strawberry Lemon Refrigerator Jam

Serves: yields about 1 cup
  • 2 cups halved fresh strawberries
  • ½ cup sugar
  • 1 tsp fresh lemon juice
  • 1 tsp lemon zest
  1. Combine all ingredients in a medium saucepan, and bring to a boil over medium-high heat, stirring frequently.
  2. Reduce heat to medium-low, and simmer 45-60 minutes, or until thick, stirring occasionally.
  3. Transfer to containers and cool. Store in the fridge for up to 2 weeks.
