Line a baking sheet with either parchment paper or nonstick aluminum foil. Lay the puff pastry on it, and place the brie wheel in the center. Spread the bacon on top of the brie and drizzle with maple syrup.
Bring the four corners of the puff pastry together and press to seal. Seal the remaining edges and gently pat around the brie.
Brush all over with the beaten egg. Discard any leftover egg.
Bake for 18-20 minutes, until golden. Serve immediately
If desired, serve with apple slices and/or crackers.
