Garlic Parsley Carrots
Serves: serves 4-6
  • 1 lb carrots, peeled
  • 1 tbsp olive oil
  • salt and pepper
  • 2 cloves garlic, minced
  • 1-2 tbsp fresh minced parsley
  1. Cut the carrots into sticks -- ½-inch thick and about 2-inches long. Set aside.
  2. In a large nonstick skillet, heat the olive oil over medium heat. Add the carrots and season with salt and pepper. Cook for 8-10 minutes, stirring occasionally, until golden brown and softened.
  3. Add the garlic to the pan and cook, stirring, until fragrant -- about 1 minute.
  4. Remove from heat and toss the carrots with the parsley.
  5. Enjoy.
