Brussels sprouts
Serves: serves 4
  • 3 cups fresh Brussels sprouts
  • 2 tsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • salt and pepper
  1. Preheat the oven to 450 degrees. Line a baking sheet with aluminum foil.
  2. Remove the ends of the Brussels sprouts and any bruised outer leaves. Halve the sprouts and place in a large bowl. Add olive oil, vinegar, salt and pepper and toss to coat. Pour the Brussels sprouts onto the baking sheet in a single layer. Be careful not to crowd them.
  3. Cook for 10-12 minutes, stirring once, about halfway through. They should be browned at the edges and crisp tender when done.
