Roasted Squash and Kale Flatbread Pizza
Serves: serves 4
  • 1 large flatbread pizza crust
  • ½ cup shredded mozzarella cheese
  • 1 cup roasted diced squash
  • 1 cup baby kale
  • 1 clove garlic, minced
  • ½ cup freshly grated parmesan cheese
  1. Preheat the oven to 425 degrees. Set a flatbread pizza crust on a baking sheet or pizza peel.
  2. Top the pizza crust with the mozzarella, roasted squash, kale, garlic and parmesan. Slide into the oven -- for a crispier crust, cook directly on the grates. For a softer one, use a baking sheet. This can also be cooked on a pizza stone.
  3. Bake for 8-10 minutes, until the cheese is melted and the edges are lightly browned. Remove from the oven and let sit for a few minutes before slicing and serving.
